Title: Ricotta & Vegetable Pasta

1lbPasta, angel hair if Available
2mdCarrots, scrubbed and Cut into matchstick size
2mdCrookneck squash, cut Into matchstick size
4 Scallions, chopped
2tbOlive oil
2 Leeks, cleaned and sliced
2tbCalvert's cedar street Garlic mustard
8ozRicotta cheese
3/4cHalf-and-half
  Freshly grated parmesan che

Ricotta and vegetable matchstick pasta. Heat olive oil and saute carrots over medium heat for 5 minutes. Add squash and scallions and saute for 3 more minutes. Cook pasta until al dente. Drain and return to pot. Toss with ricotta cheese, half-and-half mustard and sauteed vegetables. Heat quickly to warm. Serve topped with freshly grated Parmesan.
